Syrup Cooking in Grady County

This photo shows the sad remains of an old evaporator used for removing water during sugar cane syrup production. As the juice thickened into syrup it passed from one partitioned area to the next. This method was more efficient than the kettle method. We were told that this was the site of an early cooking facility in Grady County.
